Small-Batch Spiced Banana Mac Pancakes

Here are a few tips to my small-batch spiced banana mac pancakes. First, don’t put yourself through the daunting task of chopping macadamia nuts (or any other nut for that matter) any longer. Grab a heavy bottomed glass or jar and use it to crush those nuts! See the photo below for the magic that is crushed nuts! Secondly, if you find yourself out of butter, don’t fret! If you can, give your batter 10 minute rest—I’ve found that the extra time allows everything to activate for fluffier pancakes! Watch for the middle bubbles to start to rise to the top and the outer edges to set before flipping your cake and don’t be afraid to adjust your heat as necessary. Turn to your pantry and grab that jar of O Organics Ghee! Don’t beat yourself up if your first pancake falls flat. I like to call that guy the “chef’s cake” and snack on it as I go. And finally, whatever you do, don’t skimp on the O Organics 100% pure maple syrup. It’s the key to the ultimate flapjack stack!
Small-Batch Spiced Banana Mac Pancakes
Serves 2
INGREDIENTS
1 cup plus 2 tablespoons all-purpose flour
1 1/2 teaspoons baking powder
Pinch of kosher salt
2 teaspoons sugar
¼ teaspoon ground cardamom
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
¼ cup Signature SELECT macadamia nut dry roasted salted, crushed (see post for notes), plus more for serving
1 cup whole milk
1 large egg
1 teaspoon vanilla extract
1 banana, roughly chopped, plus more for serving
1 1/2 tablespoons melted and cooled O Organics Ghee, plus more for cooking
O Organics 100% Pure Maple Syrup, for serving

Start by preheating your oven to 200°F and setting a large sheet pan inside on the middle rack. In bowl, whisk the flour, baking powder, salt, sugar, cardamom, nutmeg, cinnamon, and macadamia nuts together. In a large glass measuring cup or something similar, whisk the milk, egg, and vanilla until well combined, then whisk in the melted and cooled ghee. Fold the wet mixture into the dry mixture and mix until just combined then fold in the bananas in a couple folds. The goal is to mix the batter as minimally as possible. I find that a thicker batter yields more evenly shaped pancakes, but thin with milk as necessary.
Let the batter rest for at least 10 minutes. Heat a large pan over medium-low heat and add a teaspoon or so of ghee when hot, swirling the pan to evenly coat the surface. Add more as necessary. Scoop about a ¼ cup of the batter or so onto the middle of the pan and cook for around 2 minutes or until the edges look just set and bubbles rise to the surfaces in the middle. Flip and cook for a minute or two more or until both sides are golden brown. Transfer to the sheet pan in the oven and repeat with the remaining batter, adding more ghee to the pan when needed. Serve with sliced bananas, crushed macadamia nuts, and lots of maple syrup.
